Created by Don Beach in the 1930s and resurrected back to life by the investigative journalism of Jeff Berry, the Zombie is a staple of every tiki bar in the world.
Zombie (Blended)
Rum, rum, rum, falernum, absinthe, lime, grenadine, grapefruit, and cinnamon
Glassware
Tiki mug, highball or a coconut
Garnish
Pineapple wedge and pineapple leaves
Ingredients
30ml Dark rum
25ml Light rum
15ml Overproof rum
20ml Lime Cocktail Juice
15ml Falernum Syrup
15ml Don's Mix Syrup
5ml Grenadine
4 dashes of absinthe
1 dash of aromatic bitters (such as Angostura)
2 drops of Saline Solution

0.5g (1/4 teaspoon) Xanthan Gum
160g crushed ice
Recipe
Prepare glass and garnish.
Combine the first ten ingredients in a blender.
Blend without ice to combine everything.
With the blender running, slowly add the Xanthan Gum.
Stop, add ice and then pulse until the desired texture is reached.
Pour into glass and garnish.
