Ramos Gin Fizz

I once worked at a bar that had a Ramos Gin Fizz on the menu. It was the third-best-selling drink. A Ramos Gin Fizz is a peculiar drink in that you combine egg whites, cream, spirit and citrus and shake until a meringue-type foam forms within the drink. That can take anywhere from three minutes to ten. I suggest getting a friend involved if you plan on making this.
Ramos Gin Fizz
Gin, lemon, lime, cream, egg white, vanilla, orange blossom and soda
Glassware
Collins
Garnish
Mint spring and orange slice
Ingredients
60ml Gin
15ml Lime Cocktail Juice
15ml Lemon Cocktail Juice
20ml Sugar Syrup
20ml Egg White (for this drink, you will need actual egg whites; Cocktail Foamer does not work here)
20ml Cream
2 dashes Orange Blossom Water
3 drops Vanilla essence
30ml Soda water
Recipe
Prepare the glass and garnish.
Shake the first eight ingredients with ice.
Strain out the ice and add it back to the shaker.
Place two ice cubes in the shaker.
Shake until ice cubes can no longer be felt or heard within the tin.
Slowly, pour two-thirds of the shaker into the glass (no ice), whilst simultaneously pouring in the soda.
Place in the fridge and allow the drink to rest for at least one minute.
Carefully pour the remaining content of the shaker into the glass.
The liquid should start to rise above the glass, like a whipped meringue.
Garnish.
