A strong tiki classic with rum, citrus, falernum, cinnamon and spice.


Created by Don Beach in the 1930s and brought back to life through the work of Jeff Berry, the Zombie is one of the great tiki drinks. It is bold, layered and rum-heavy, with enough citrus, spice and sweetness to keep everything balanced.

Zombie

Rum, rum, rum, falernum, lime, grapefruit and cinnamon.


Glassware

Tiki mug, highball or coconut.


Garnish

Mint bouquet.

Optional: lime wheel, grapefruit wedge or cocktail cherry.


Ingredients

30ml dark rum

15ml white rum

15ml overproof rum

20ml grapefruit juice

2 dashes absinthe

1 dash aromatic bitters, such as Angostura


Recipe

Prepare your glass and garnish first.

Add all ingredients to a shaker with ice.

Shake hard until chilled.

Fine strain into a tiki mug or tall glass filled with fresh ice.

Garnish with a mint bouquet.


Notes

This is a strong drink, so use rums with enough character to stand up to the citrus and spice.

Fresh grapefruit juice works best here.

If you want a slightly sharper drink, increase the Lime Cocktail Juice to 25ml.

For a richer, more spiced version, increase the Cinnamon Syrup to 15ml.
