A fresh, lively rum highball with lime, mint, sugar and soda.


The Mojito can be a little demanding during a busy service, but there is a reason people keep ordering it. When made well, it is bright, cold, refreshing and hard to dislike.

Mojito

Rum, lime, mint and soda.


Glassware

Collins glass.


Garnish

Mint bouquet.


Ingredients

60ml Rum

8-12 mint leaves

20ml Soda water, if desired.


Recipe

Prepare your garnish first.

Add the rum, Lime Cocktail Juice and Simple Sugar Syrup to the glass.

Add the mint leaves.

Gently press the mint with a muddler or bar spoon to release the aroma. Do not crush it too hard, or it can turn bitter.

Half-fill the glass with crushed ice.

Churn or stir to combine.

Add more crushed ice to fill the glass.

Top with soda water, if desired.

Gently stir again.

Garnish with a mint bouquet.
