A twist on the classic Paloma, containing tequila, grapefruit and soda. The inclusion of Hibiscus creates a slightly drier and more complex highball.

Tequila, hibiscus, grapefruit, and soda
Glassware
Collins with a salted rim
Garnish
Grapefruit wedge
Ingredients
60ml Tequila
30ml Acidified Grapefruit Juice (adjusted to the acidity of lime)
20ml Hibiscus Syrup
2 drops of Saline Solution
120ml Soda water
Recipe
Prepare your glass and garnish
Moisten the outside of with your grapefruit wedge and roll it over salt.
Shake the first five ingredients with ice
Fine strain into the prepared glass, filled with ice.
Top with the soda and gently stir
Serve with a grapefruit wedge
