A honey-laced rum sour topped with sparkling wine.


The Air Mail sits somewhere between a Daiquiri and a sparkling cocktail. It sounds decadent, but the combination of rum, lime, honey and bubbles makes it light, bright and very easy to drink.

Air Mail

Rum, lime, honey and sparkling wine.


Glassware

Collins glass.


Garnish

Mint bouquet


Ingredients

30ml Gold rum 15ml Lime Cocktail Juice

45ml Sparkling wine


Recipe

Prepare your glass and garnish first.

Add the rum, Lime Cocktail Juice and Honey Syrup to a shaker with ice.

Shake hard until chilled.

Fine strain into a Collins glass filled with fresh ice.

Top with sparkling wine.

Stir gently to combine.

Garnish with a mint bouquet.
