The Pina Colada is one of the world's most well-known cocktails. But have you tried adding pandan? It creates a whole new layer of complexity with wonderful green vanilla notes.
Pandan Pina Colada (Blended)
Rum, pineapple, coconut, lime, and pandan
Glassware
Tiki mug, highball or a coconut
Garnish
Pineapple wedge and pineapple leaves
Ingredients
45ml Rum
45ml Cream of Coconut
30ml Pandan Syrup
2 or 3 chunks of frozen pineapple
2 dashes of aromatic bitters (such as Angostura)
4 drops of Saline Solution

0.5g (1/4 teaspoon) Xanthan Gum
160g crushed ice
Recipe
Prepare the glass and garnish.
Combine the first six ingredients in a blender.
Blend without ice to combine everything.
With the blender running, slowly add the Xanthan Gum.
Stop, add ice and then pulse until the desired texture is reached.
Pour into the glass and garnish.
