A silky tequila sour with lime, orgeat and orange blossom.


The Infante is a floral, almond-laced twist on a Margarita. It removes the orange liqueur and uses orgeat instead, giving the drink a soft texture, gentle nuttiness and a beautiful aromatic finish.

Tequila, orgeat, lime and orange blossom.


Glassware

Rocks glass.


Garnish

Freshly grated nutmeg.


Ingredients

60ml Tequila 25ml Lime Cocktail Juice

20ml Orgeat

15ml cocktail foamer, such as egg white

3–5 drops orange blossom water


Recipe

Prepare your glass and garnish first.

Add all ingredients to a shaker with ice.

Shake hard until chilled.

Strain out the ice, then shake again without ice to help build the foam.

Fine strain into a rocks glass over fresh ice.

Garnish with freshly grated nutmeg.
