The Penicillin is well well-known cocktail utilising smoky notes from scotch with spicy ginger and floral honey. What we've done is increase the smoke and spice to a whole new level.

Whisky, peated whisky, ginger, lemon, honey, and chipotle

A skewered piece of crystallised ginger

Ingredients

50ml Whisky (ideally something with light peated notes, such as a blended scotch) 10ml Ginger Syrup 30ml Lemon Cocktail Juice

30ml Chipotle Honey Syrup

10ml Peated Whisky (such as a Scotch like Lagavulin or Laphroaig)

Recipe

1. Prepare your glass and garnish.

2. Shake all ingredients, except the peated whisky, with ice.

3. Fine strain into the glass filled with ice.

4. Gently pour peated whisky on top.

5. Garnish.
